Vegetable Pieces

  1. Vegetable pieces maintain their freshness after processing.
    1. The product can be kept fresh.
    2. It is possible to keep the sliced edged of the product from browning.
  2. Maintenance and enhancement of vegetable flavor.
    1. Better taste better due to little leeching of nutrients, so the vegetables are not likely to lose any of their nutritional value.
    2. There is little chance of the product losing flavor, as vacuum sealing and other such oxidization prevention methods are not used.
    3. Peeled potatoes with eyes removed are able to be transported without the use of water.
    4. Freshness can be maintained with no browning for up to 2 weeks without the employment of water or vacuum sealing.
    5. Much better taste due to there being little leeching of nutrients, etc., from the product.
  3. Vegetable pieces are less susceptible to the growth of bacteria after processing.
    1. Numbers can be kept below 300 per 1g when refrigerated (5℃).
    2. Typical bacterial numbers on the product can be maintained for up to between 3-7 days from the onset.
    3. Tests for coliform bacteria remain negative for up to between 5-7 days.
